Paradise North Distillery White Whiskey is the raw expression of our distilled grain mash. Aging for a very brief time is necessary to call this a whiskey and does not add any barrel flavors. In its raw form, this spirit provides a unique flavor when used in a whiskey Margarita or a Bloody Mary. While grains of rye and corn are more easily discerned in our white whiskey, Old M-28 White Whiskey is very smooth. No matter where your country road is, it will lead you to paradise.

Old M28 is a reference to one of many places of paradise. Typical of many up-north locations, this road leads to a place where problems are left behind and one can immerse themselves in everything the north woods has to offer. Aged in small casks, the small batch handcrafted Bourbon shuns the woody harshness that can result from extended micro-barreling. Paradise North’s Essen House Cherry Bounce starts with fresh Door County grown Montmorency tart cherries. The cherries are then macerated in a neutral spirit and sugar until the resulting cherry infused spirit is placed in used bourbon barrels for several months of aging. In the barrel, Essen House Cherry Bounce develops a nice blend of woody, vanilla, and chocolatey tannins. Hand-crafted in small batches using locally harvested and sourced botanicals whenever possible.
